Turkish Coffee is made by roasted and then finely ground coffee beans, boiled in a pot, usually with sugar... served in a small cup where the grounds are allowed to settle. You can taste it in the Middle East, North Africa, the Caucasus, the Balkans, Bali, and Eastern Europe!

Istanbul was introduced to coffee on the 16th century during the reign of Sultan Suleiman the Magnificent, by Özdemir Pasha, the Ottoman Governor of Yemen who had grown to love the drink while he was living in Turkey.

This coffee soon became a vital part of the cuisine in the palace. For this reason was created the position of Chief Coffee Maker, who had as duty to brew the Sultan's or his patrons coffee! He was chosen for his loyalty and ability to keep all the secrets surrounding the coffee!
